The asparagus from Andriano
In addition to apples and grapes, asparagus is also grown in Andriano. Along the Adige river, the environmental conditions and sandy soils are particularly favourable for the optimal growth of this healthy and tasty vegetable.
In spring, our chefs spoil you with tasty asparagus dishes. From pizza with asparagus to delicious asparagus cream and risotto with asparagus and wild garlic. There are many dishes that are served in spring.
However, the traditional dish par excellence is asparagus with Bolzano sauce. A simple and tasty preparation in which the asparagus is cooked, usually accompanied by boiled potatoes, ham and horseradish and the Bolzano sauce, the recipe for which we leave to you here:
Bolzano sauce based on my grandmother’s recipe.
Ingredients:
4 eggs
olive oil
1 tablespoon of mustard
1 tablespoon apple cider vinegar
a little lemon juice
1 tablespoon chopped parsley
1 tablespoon chopped chives
salt and pepper
Preparation:
Boil the eggs, press the yolk through a sieve with your thumb, slowly stir in the olive oil and mustard until a kind of mayonnaise is formed. Finely chop the white of the boiled egg and mix with all the other ingredients.
